The balance between fruit, oak and butteriness. The soil type is clay loam over marine limestone providing purity of flavour and a long, slow ripening window. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"\" data-rte-preserve-empty=\"true\"\u003eFruit was picked in the cool early morning hours of late summer\/early autumn then gently whole bunch pressed after gravity filling our air bag Europress.  Juice was taken straight from the press tray with full solids (cloudy) no additions to French oak puncheons.  Natural ferment occurred over the next 7-10 days, part of the wine was allowed to go through Malo lactic fermentation, with stirring on lees every two weeks.  \u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\"\u003eAfter 9 months maturation the wine was racked and then filtered through a cross flow filter - no finings are required, only the addition of SO2.  The wine is therefore vegan, not by design but due to gentle handling for optimum winemaking flavour expression.\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\"\u003e100% Wrattonbully\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\"\u003e100% Chardonnay\u003c\/p\u003e\n\u003cp data-rte-preserve-empty=\"true\"\u003e100% 2024\u003c\/p\u003e\n\u003cp class=\"\" data-rte-preserve-empty=\"true\"\u003e\u003cspan\u003eBright, golden colour with aromas of Green Apple, Pear and Lemon zest. I still don’t understand how the Clare makes such great Riesling, it’s really hot and dry and the water sources for irrigation are the lowest allocations I’ve ever seen in Australia but it just does it every year.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"\"\u003e\u003cspan\u003eThis site is shoot thinned and bunch thinned to reduce disease and allow ripening early.
